Ingredients (serves 4) 2 large carrots (peeled & diced) 1 onion (peeled & diced) 1 fennel bulb (trimmed & diced) 1 green pepper (trimmed, deseeded, & diced) 2 cloves of garlic (minced) 1/2 bunch of thyme 1 bay leaf 4 red potatoes (diced) 1 c diced butternut squash 1 c diced celery 2 tbsp tomato paste 3 c vegetable stock 2 c water 1/2 lemon juiced, and zested 1/4 c crème fraiche 1 tsp curry powder 1 tsp paprika 1 pinch of nutmeg 1 pinch of cinnamon 3 tbsp canola oil salt and black pepper to taste Method Begin by heating two tbsp of canola oil over medium high heat in a large, deep soup pot....more>
